Brownies, Banana Bread, Dip

I hope you all are finding ways to stay warm!  It has been cold across the U.S. it seems lately!  Bill has headed to VA to work with Dr. Tim Clinton on their new radio show called Life, Love & Family, you can listen at   http://lifeloveandfamily.net/listen.html

Here are a few more recipes for these cold days:

Spicy Dip

Ingredients:

16 oz. Sour Cream

12 oz Salsa (your choice, mild, medium or hot)

1 Pkg of Ranch Salad dressing Mix

Pour all 3 ingredients into medium size bowl and stir until well blended.  Refrigerate for a couple hours before serving for best flavor.  This dip is great with Veggies or Chips!

Banana Bread

Banana Bread

Ingredients

  • 1-3/4 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 medium ripe bananas, mashed (1 cup)
  • 1/2 cup canola oil
  • 1/4 cup plus 1 tablespoon buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Directions

  • In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts.
  • Pour into a greased 9-in. x 5-in. loaf pan. Bake at 325° for 1 hour 20 minutes or until a toothpick comes out clean. Cool on wire rack. Yield: 1 loaf.

Caramel Brownies

 

Chocolate & Caramel Brownies

Ingredients

  • 2 cups sugar
  • 3/4 cup baking cocoa
  • 1 cup canola oil
  • 4 eggs
  • 1/4 cup 2% milk
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1 cup chopped walnuts, divided
  • 14 ounces caramels
  • 1 can (14 ounces) sweetened condensed milk

Directions

  • In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in chocolate chips and 1/2 cup walnuts.
  • Spoon two-thirds of the batter into a greased 13-in. x 9-in. baking pan. Bake at 350° for 12 minutes.
  • Meanwhile, in a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. Sprinkle with remaining walnuts.
  • Drop remaining batter by teaspoonfuls over caramel layer; carefully swirl brownie batter with a knife.
  • Bake 35-40 minutes longer or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack. Yield: 2 dozen.
