Summer Fun with a Little Spice

It’s another hot day here in Middle Tennessee but it is beautiful outside as long as you are looking out the window!  The grass is a little more green after the rain we have had which was a huge blessing.  We all need to pray for those areas that still need rain and for people to be safe in all of the heat.  Here are a few Summer Recipes that will hopefully bless you:

Sub Sandwich

Spicy Sub Sandwich

Ingredients

  • 1 round loaf (1-1/2 pounds) rye bread
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 jar (2 ounces) diced pimientos, drained
  • 1/4 to 1/2 teaspoon hot pepper sauce
  • 1/2 pound sliced provolone cheese
  • 1/4 pound sliced fully cooked ham
  • 1/4 pound sliced cooked turkey
  • 1/4 pound sliced Genoa salami
  • 1/4 pound sliced mozzarella cheese

Directions

  • Cut bread in half horizontally; hollow out top and bottom, leaving a 3/4-in. shell. (Discard removed bread or save for another use.)
  • In a small bowl, combine mayonnaise, mustard, pimientos and hot pepper sauce; spread 1/4 cup in the bottom bread shell. Layer with a fourth of the provolone, ham, turkey, salami and mozzarella. Spread with more of the mayonnaise mixture. Repeat layers three times (you may not use up all of the mayonnaise mixture). Replace bread top and wrap tightly with plastic wrap.
  • Chill for at least 3 hours. Remove from the refrigerator 30 minutes before serving. Cut into wedges; serve with remaining mayonnaise mixture if desired. Yield: 6-8 servings.

Broccoli Fritters

Broccoli Fritters

Ingredients

  • 1 bunch broccoli, cut into florets
  • 2 eggs, lightly beaten
  • 2 egg whites, lightly beaten
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 2 tablespoons canola oil
  • Salsa, optional

Directions

  • Place broccoli in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-4 minutes or until crisp-tender. Coarsely chop broccoli and set aside.
  • In a large bowl, combine the eggs, egg whites, cheese, flour, salt, garlic powder and pepper. Stir in broccoli.
  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Drop batter by 2 heaping tablespoonfuls into oil; press lightly to flatten. Cook in batches for 3-4 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels. Serve with salsa if desired. Yield: 6 servings.

Slow Cooker Chicken Enchilada Casserole

Chicken Enchilada Casserole in Slow Cooker

2 cans (4.5 oz each) Old El Paso® chopped green chiles
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (10 oz) Old El Paso® green enchilada sauce or other green chile enchilada sauce
1/4 cup mayonnaise or salad dressing
12 corn tortillas (6 inch), cut into 3/4-inch strips
3 cups shredded cooked chicken
1 can (15 oz) Progresso® black beans, drained, rinsed
2 cups shredded Mexican cheese blend (8 oz)
2 large tomatoes, chopped (about 2 cups)
2 cups chopped lettuce
1/2 cup sour cream
Spray 3- to 4-quart slow cooker with cooking spray. In cooker, spread 1 can of the green chiles. In medium bowl, mix remaining can of green chiles, the soup, enchilada sauce and mayonnaise.
Arrange 1/3 of the tortilla strips over chiles in cooker. Top with 1 cup of the chicken, 1/2 cup of the beans, 1/2 cup of the cheese and 1 cup of the enchilada sauce mixture, spreading to edges of cooker to completely cover tortilla strips. Repeat layers twice, reserving last 1/2 cup of cheese.
Cover; cook on Low heat setting 6 to 7 hours.
Top with remaining 1/2 cup cheese. Cover; cook about 5 minutes longer or until cheese is melted. Serve with tomatoes, lettuce and sour cream.
Corn on the Cob

Ingredients

  • 4 large ears sweet corn, husks removed
  • 4 tarragon sprigs
  • 1/3 cup butter, melted
  • 4 teaspoons reduced-sodium soy sauce
  • 2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon

Directions

  • Place each ear of corn with a tarragon sprig on a 14-in. x 12-in. piece of heavy-duty foil. Fold foil over corn and seal tightly. Grill corn, covered, over medium heat for 10-12 minutes or until tender, turning occasionally.
  • In a small bowl, combine the butter, soy sauce and minced tarragon. Open foil carefully to allow steam to escape; brush corn with butter mixture. Yield: 4 servings.
